Black Sombrero Chorizo and Cheese Quesadillas


• 2 flour or corn tortillas
• ¼ – ½ cup shredded cheese of your choice such as Oaxaca, marble, mozzarella, Monterey jack
• ¼ – ½ cup fried black sombrero chorizo

Optional toppings: sour cream, salsa, guacamole, avocado slices, fresh chopped cilantro, chopped onion

• Side of refried beans (recipe available)


Place 1 tortilla on a plate

Spread the chorizo on the tortilla and then sprinkle the cheese on top of the chorizo. Place other tortilla on top

Transfer to frypan or grill.

Cook on medium for about 4 minutes or until golden brown. Don’t cook at high heat as the tortilla will be overcooked or burned and the cheese inside won’t have time to melt. Flip over and cook the other side , some cheese may start to melt out of the tortilla. That is okay, it starts to get a bit crispy and delicious!

Transfer to a plate and cut into quarters.

Serve with the selected toppings of your choice listed above.

Quesadillas are delicious when served with a side of refried black beans
