Schnitzel Torta with Black Sombrero Chorizo

Ingredients

• 1 ciabatta bun or a large bun of your preference
• 1 piece of breaded pork schnitzel
• 1/4c of Oaxaca cheese or substitute mozzarella,  shredded
• 1/4c Black Sombrero chorizo already fried
• 3 tbsp refried black beans (see recipe on site)
• ¼ of an avocado sliced
• 1 –2tbsp cooking oil
• ½ of a tomato sliced
• 2 tbsp of butter
• 1 slice of onion
• Salsa of your choice


Directions

Heat cooking oil in a frypan. Fry the schnitzel on each side until cooked. Remove from pan and set aside.

Now place the chorizo in the frypan to heat and gather it together to be the shape of the bun. Now place the cheese on top of the chorizo and allow it to melt, then flip it once.  As the cheese is melting ,cut the bun in half. Spread 1 tbsp of butter on the cut side and place bun face down in a frypan on medium. Warm the bun

Flip the bun over and spread the beans on the bottom piece of the bun

Place schnitzel on top of beans, then top with chorizo and cheese, followed by the onion, tomato and sliced avocado.

Finish it off with a spoon of salsa, then place the other half of the bun.

If desired, sandwich can be cut in half.

 

Yield: 1 torta for 1 person

 

Options:

Use guacamole instead of onion and avocado

Instead of using the schnitzel, replace it with chorizo and scrambled egg, cheese optional

Add a couple of sprigs of cilantro to sandwich
