Breakfast Burritos

Ingredients

• 1 large 12” flour tortilla
• 1lb Black Sombrero Chorizo
• ¼ cup shredded cheese of your choice, Suggestions include: Oaxaca, marble, mozzarella, Monterey jack , chihuahua
• 2 eggs
• 3tbsp refried black beans
• A few sprigs cilantro
• 1-2 tsp diced onion
• Salsa of your choice
• Optional guacamole


Directions

Cook the thawed  chorizo in a skillet on medium breaking apart  while cooking, approximately 5 min until cooked, set aside

Crack 2 eggs onto skillet and start to scramble, add in ¼ c of black sombrero chorizo with the eggs cook until eggs are cooked.

Place tortilla on the grill to heat, place beans on the tortilla and top with shredded cheese.  Once the cheese starts to melt top with scrambled eggs and chorizo.  Remove from grill to plate and top with onion, salsa, cilantro and guacamole if desired.

Fold up the bottom end about 2 inches and then fold over one side and then the other side.

Yields: 1 serving

Side note: refried beans, much better to make homemade! Take cooked black beans, fry garlic in small amount of oil, a pinch of cumin, cook with drained black beans, then mash it, add a bit of water if too dry. Enjoy!
